Broccoli Salad
3-4 Cups Fresh Broccoli, cut up
1/8 C. Red Onion, finely chopped
5 slices bacon, cooked crisp and crumbled
1/8 Sunflower Seeds
Mix all ingredients together.
Dressing
1/2 C. Mayonnaise
1 T. Red Wine Vinegar
1/4 C. Sugar
1/4 t. Salt
Mix well and pour over broccoli

Easy Green Chili
3 lb Pork Roast, cut into bite size chunks
1 Onion, chopped
1 Clove Garlic, minced
2 Large Cans Diced Green Chili's
1 Large Can Diced Tomatoes
1 Chicken Bullion
Salt and Pepper
In a dutch oven, saute' pork in 2 T. oil. Add onion and garlic. Add remaining ingredients. Fill pot with water and simmer for 1 1/2 hours.

1 Can Diced Tomatoes
2 or 3 cans of water

Optional: Server over cooked rice and top with cheddar cheese and sour cream.

1 t. Chopped Onion
1 C. Milk
10oz Frozen Broccoli, or Fresh
1/2 Green Pepper
2 Cans Tuna
2 C. Cooked Pasta- Bow Ties
2 C. Shredded Cheddar Cheese
Salt and Pepper
In a medium sauce pan, mix 1st 5 ingredients together. Slowly add milk and cook until thick. Add 1 cup cheese until melted. Add remaining ingredients. Put into a buttered 2 qt. casserole dish and bake covered in a 350 oven for 25 minutes.

Spinach Lasagna
2 boxes frozen chopped spinach
1 large container ricotta cheese
1/2 C. chopped parsley
2 eggs
dash nutmeg
salt and pepper
parm cheese
4 C mozzarella cheese
Spaghetti Sauce
1 box lasagna noodles (I use the no-cook noodles)
Thaw and drain spinach. Mix all ingrediaents together except for the cheeses and spaghetti sauce.
Layer the spaghetti sauce, spinach mixture and cheeses over noodles. Repeat layers. Cover with foil and bake in a pre-heated 350 oven for about an hour.

1 Leek, chopped

1 large carrot, chopped
2 stalks celery, chopped
2oz bacon, fried, reserving the grease

Saute' all ingredients in bacon grease. Add sliced potatoes, cook for about 20 minutes. Add 5-7 cups of water, until desired thickness. Add salt and pepper to taste.
